A Goulash is a Hungarian stew, seasoned with the wonderful flavour of smokey paprika. This is my own low carb version of this traditional dish.

Olive or coconut oil
1 large red onion, finely sliced
1-2 cloves of garlic, crushed
2 red peppers, finely sliced
500g beef stewing steak, cut into chunks
1 tbsp. smoked paprika
1 tin chopped tomatoes
1-2 teaspoons tomato puree
2 bay leaves
200ml red wine (optional)
300ml bone stock or 500ml of stock if you are not using wine
If your slow cooker needs to be preheated, turn it on 15 minutes before using. Refer to your manufacturer’s instructions for more information on your specific model temperatures.
Using your slow cooker sauté facility or a sauté pan, heat the oil and cook the onion, garlic and beef until browned and the onions start to soften. This step helps seal the meat so well worth the effort.
Return this to the slow cooker and add all remaining ingredients. Season to taste.
Place on high for 3-4 hours, or low for 6 hours.
Serve with a few dollops of soured cream.
