Molten Chocolate Pudding #sugarfree #LCHF #lowcarb #grainfree #glutenfree

My son loves these, just out of the oven and served with homemade ice-cream or cream. This recipe is for 4 but you can half the recipe if you want to make less.

Serves 4

Nutritional information Per Serving

497 Kcals

42g fat

6.4g net carbohydrates

18.8g Protein

120g Ground almonds /Almond flour

75g Sugar free cocoa or cacao powder

100g erythritol or xylitol

1 tsp sugar-free vanilla extract (optional)

75g butter

4 eggs

  • Preheat the oven to 180c/gas mark 4. Grease the ramekins with butter and finish with a sprinkle of cocoa.

  • In a mixing bowl, combine all the ingredients together and whizz with your food mixer.

  • Spoon into your ramekin dishes and smooth the top.

  • Place in the oven and bake for 12-15 minutes.

  • Remove, and using a knife, run around the edge of the ramekin, before tipping out onto a plate.

  • I have served with some sugar free vanilla ice-cream. You can sprinkle with a little sugar-free icing and add a couple of berries to the plate if you want a professional finish!!
